Ham, Zucchini & Cheese Rosette

Serves: 3


Using pre-made pizza dough to roll this fully loaded rosette makes it a quick and easy meal. Can be made for brunch or lunch, add a side salad like I did and it is dinner.


Ingredients

2 tbsp olive oil

¼ cup chopped onion

½ cup chopped bell peppers

2 cups shredded zucchini

1 tsp garlic salt

1 tsp hot pepper flakes (optional)

1 ½ cup chopped ham

1 Pillsbury pizza dough

1 cup shredded mixed cheddar cheese

1 egg


Directions

  1. Preheat oven 400°F and line baking sheet with parchment paper

  2. Heat oil on high in medium sauté pan

  3. Sauté onions and pepper for two minutes

  4. Squeeze zucchini to get out as much of liquid as possible and add to pan along with garlic salt and hot pepper flakes

  5. Cook for five minutes and stir in ham

  6. Continue to cook until zucchini is cooked

  7. Roll out pizza dough on a flour coated counter

  8. Sprinkle cheddar cheese on pizza dough

  9. Top cheese with zucchini ham mixture

  10. Roll up dough and trim off ends to where the filling start

  11. Grab one end and roll into a middle to shape a round

  12. Using a sharp knife make cuts ¾ into the roll so it looks like a rosette flower

  13. Beat egg and brush on top of rosette

  14. Bake for 25 minutes or until dough is golden

  15. Let sit for five minutes and serve with a side green salad
