Fully Loaded Meatloaf

I thought instead of infusing the meat with the veggies I usually use, I’d explore using peppers, cauliflower, broccoli and leeks that are roasted, then chopped and spread on a rolled out version of meatloaf. With the ham and two different kind of cheeses this made it for a tasty dish. Served with salad and rice it was a filling meal.


Ingredients

Cooking spray

2 cups broccoli flowerets

2 cups cauliflower flowerets

1 cup chopped leeks into 1 inch chunks

3 bell peppers cut into quarters

1 tsp Lawry’s garlic salt or salt, pepper and dried garlic

1 pound ground turkey

2 pound ground pork

3 eggs

1 tsp salt

1 tsp pepper

1 tbsp crushed garlic

¾ cup grated parmesan cheese

12 slices ham

12 slices mozzarella cheese

3 cups shredded Friulano Montasio cheese


Directions

  1. Pre-Heat oven to 400°F and line large baking sheet with aluminum foil and spray with cooking spray

  2. Lay out all the veggies and spray with cooking spray and sprinkle with seasonings

  3. Cook until veggies are tender, turning once

  4. Let cool and then use food processor to chop into fine paste, set aside

  5. Pre-Heat oven to 400°F

  6. In a large bowl add ground meat, eggs, salt, pepper, garlic and grated cheese and mix well

  7. Lay the meat out onto a large piece of parchment and press meat out until you have a ½ inch rectangular layer

  8. Place ham on top of meat, then add mozzarella cheese

  9. Spread the veggies on top of the cheese

  10. Sprinkle shredded cheese on top of veggies

  11. Using the parchment paper roll the meat up into a log

  12. Move it to a large piece of foil and seal it tightly

  13. Bake for 45 minutes

  14. Unwrap the meatloaf and bake for another 30 minutes

  15. Meatloaf is ready when it is nicely browned and juices are clear

  16. Let sit for ten minutes then cut and serve with rice and a salad
