Egg and Spinach Baguette Sandwich

Makes 4 sandwiches


Either purchase the bread you want or you can use my French Baguette recipe as I did. I served with a Coleslaw and made it a meal.


Ingredients

4 eggs

¼ cup mayonnaise

1 tbsp Dijon mustard

½ tsp paprika

½ cup baby spinach finely chopped

¼ cup finely chopped celery

¼ cup finely chopped green onions

1 tbsp lemon juice

Salt and pepper to taste

Baguette bread – I used 4 baby baguettes


Directions

  1. Place eggs in saucepan with water and boil them for 8 minutes until hardboiled

  2. Run them under cold water and remove the shell

  3. Chop eggs into small pieces into a large bowl (I used egg slicer)

  4. Whisk together mayo, mustard, paprika and lemon juice until well blended and add to egg bowl

  5. Destem spinach and finely chop the leaves and add to eggs

  6. Add the rest of the ingredients excluding bread into the bowl and mix everything well

  7. Cut baguettes in half and scoop ¼ of the mixture into each sandwich

Serve with coleslaw or side salad
