Dijon Broccoli Chicken over Rice

Serving size 4

Ingredients

6 tsp Dijon mustard

1 tbsp olive oil

1 pound chicken breast, cut into thin strips

1/2 cup chicken broth

1 clove garlic, minced

4 cups broccoli flowers

1 tbsp soy sauce

Hot pepper flake (optional)

Directions

  1. Mix chicken broth and soy sauce, set aside

  2. Heat oil, add broccoli and garlic and cook to crisp tender on med-high heat. Remove from skillet and set aside.

  3. Add chicken to skillet and keep stirring until fully cooked

  4. Stir in broth/soy mixture and bring to a boil.

  5. Reduce heat to medium-low. Stir in mustard until well blended.

  6. Add broccoli to chicken and cook until heated thoroughly.
