This is a stir fry that has rice and crunchy noodles which gives every bite lots of texture and flavour.
Ingredients
1 tbsp sesame oil
1 tbsp olive oil
1 pound beef stir fry meat
1 ½ cup julienned onion
1 ½ cup julienned bell pepper
½ cup vegetable broth
1 tbsp soya sauce
1 tbsp red pepper flakes (optional)
3 cups cooked rice
¼ cup chopped parsley
½ cup fried noodles chopped up
Directions
Heat both oils on high in a large wok style pot
Add beef and sauté until edges brown
Using a slotted spoon remove beef and set aside
Add onion and peppers to the pot and sauté until onions are translucent
Pour in vegetable broth and let cook for two minutes
Add soya sauce and mix well
Return beef to pot and cook until liquid is reduced to a thick sauce, about five minutes
Stir in pepper flakes if you want to add hot spice to your rice
Add rice and mix well until rice is fully covered with the sauce
Stir in parsley and fried noodles
Serve immediately to get the crunchy texture the noodles provide
