I’ve been wanting to make this crockpot meal for a while but for some reason or another always postponed making it. There is two phases with a quick sauté of veggies and chicken for five minutes before putting it into the crockpot for 3.5 hours. Served over rice and with a glass of rice makes this full meal.
Ingredients
1 tbsp olive oil
1 chopped onion
2 cups broccoli flowers
2 large chicken breast chopped in cubes
1 tbsp sesame oil
2 tbsp cornstarch
½ cup tbsp water
1/3 cup honey
¼ cup tamari sauce
1 tbsp sesame oil
1 tbsp hot pepper flakes
1 tsp salt
¼ cup vegetable broth
2 tbsp ketchup
Cooked rice
Sesame seeds
1 tbsp finely chopped parsley
Directions
Heat oil in skillet, add onions and cook until soft
Add broccoli and sauté for five minutes
Add chicken and first sesame oil and sauté for three minutes
Place chicken broccoli mixture into crockpot
In a bowl mix cornstarch and water together, add in honey, tamari, sesame oil, pepper flakes, salt, vegetable broth and ketchup, and pour over chicken
Cook on high for 1 hour then turn down too low heat for 2.5 hours
Stir occasionally and taste for salt at about 3 hours. Add extra salt if required.
Scoop mixture onto rice and sprinkle with sesame seeds and parsley
