I always make roast beef and veggies in one pot and put it in the oven. Of course depending on the meat, even if you buy a good cut, the roast can be dry. Therefore I’ve been wanting to try making a roast in a crockpot for a while. Here is my version of it and I can tell you it was very tasty and tender.
Ingredients
1 ½ pound round roast
1 tbsp olive oil
1 large onion cut in large slices
2 large carrots cut in 2 inch chunks
3 cups vegetable broth
1 tbsp Worcestershire sauce
1 tbsp salt
1 tsp dried rosemary
1 tsp dried thyme
2 bay leaves
½ tsp lavender flowers
12 golden baby potatoes
Directions
Heat oil in a heavy sauce pan on high
Sear roast for 6 minutes on each side until you have a rich brown crust on each side
Place carrots on bottom of crockpot
Add roast to the crockpot
Add onions to sauce pan and cook until halfway cooked and have a nice brown colour from the pan juices
Mix together broth, Worcestershire sauce, salt, rosemary, thyme, bay leaves and lavender
Pour into onions and let mixture come to a boil
Pour liquid into crockpot
Cook on high heat for 3 hours
Add potatoes into the crockpot
Cook on high heat again for 3 hours
Take roast out and cut into chunks ad place in a soup plate
Place some veggies and juice into the plate
Serve with multi-grain bread to scoop up the juices when done
