Serving size 3 – about 650 calories per serving
Ingredients
2 tbsp oil
1 large onions julienned
3 peppers julienned (I used 1 each orange, yellow and red)
10 slices of ham - Omit this to make it vegetarian
½ cup light cream cheese
½ cup 1% milk
1 tbsp red pepper flakes
3 cups frozen or fresh gnocchi (my recipe)
½ cup shredded mozzarella
2 tbsp finely chopped parsley
Lowry’s garlic salt to taste
Shredded parmesan
Pot of salted and tbsp oil boiling water
Directions
In sauté pan heat 2 tbsp oil
Add peppers and onions and sauté on high for five minutes
Add ham and cook for five minutes
Stir in cream cheese and blend well
Stir in milk and pepper flakes and blend well
Bring pot of water too fast boil
Add gnocchi and watch for them to float to the surface
Give them a minute or two more to cook
Using a slotted scooper scoop the gnocchi into the skillet
Top with mozzarella and parsley and stir carefully
Add Lowry’s garlic salt to taste
Plate and sprinkle with shredded or grated parmesan cheese
Serve with a couple of slices of bread to soak up the sauce at the end
