Quick and easy pasta that can be made in ½ hour. Broccoli and pepper combination is delicious with chicken. To make if vegetarian, omit the chicken.
Ingredients
2 tbsp olive oil
1 large onion julienned
3 red bell peppers julienned
2 cups vegetable broth
2 cups dried pasta
2 cups cooked broccoli – I boiled them for ten minutes
1 cup sour cream
1 cup milk
¼ cup grated parmesan cheese
2 chicken breasts sliced in halves
Salt to taste
Red pepper flakes to taste
Chopped parsley for garnish
Directions
Heat oil in large pan and sauté onion and peppers for five minutes
Add vegetable broth, cover pan and let cook until liquid has been absorbed
Let cool for ten minutes in a bowl, keep pan juices for chicken
Cook pasta per directions on package
In blender add onion pepper mixture, broccoli, sour cream, milk and parmesan cheese
Blend until everything is creamy, set aside
Season four pieces of chicken with salt and fry in pan for about four minutes on each side
Stir in veggie mixture, taste for salt and add more if you want. Add red pepper flakes to taste
Add pasta and stir well
Using a slotted spoon scoop out pasta and top each plate with two pieces of chicken
Sprinkle with parsley and serve immediately
