Chocolate Cookie Toffee Balls

Makes 40 – 60 different size balls


Can’t be easier to crunch up some cookies, smoosh it with cream cheese and add in some toffee bits then roll it all together and give it a chocolate bath. Fun to make with the kids, but can be a bit messy.


Ingredients

350 grams (about 22) chocolate chip cookies

250 gram pack of light cream cheese at room temperature

¼ cup toffee bits

3 cups milk chocolate, chocolate wafers

Sprinkles


Directions

  1. Put chocolate chip cookies in Ziploc bag and crush them using a mallet or step on them until finely crushed

  2. Using wooden spoon, cream the cream cheese

  3. Stir in cookies and toffee bits

  4. Roll balls in palm of your hand and place on baking sheet. Make balls in different sizes from ½ inch to 1 inch

  5. Freeze balls for 1 hour

  6. Line a second baking sheet with wax or parchment paper

  7. Using a tall cup or soup cup microwave half the chocolate wafers on high for 1.5 minutes.

  8. Stir well with whisk and if not fully melted microwave in ten second intervals until melted

  9. Using two forks, place one ball at a time in chocolate and cover the whole ball

  10. Place ball on baking sheet and sprinkle sprinkles on each ball before the chocolate hardens. Microwave next batch of wafers as required to cover all balls

  11. When all balls are coated and sprinkled place in freezer for 1 hour

  12. Once hardened place balls in air tight container and freeze up to six months
