Chickpea Soup

Serving size 2 as a meal

Ingredients

1 can of Chick Peas

2 veggie bouillon cubes

1 tbsp oil

2 tbsp tomato paste

12 cups of water

1.5 cups dry small size pasta

2 tablespoon grated parmesan cheese

Directions

  1. Add all ingredients except pasta into a large pot

  2. Bring to a full boil

  3. Turn heat down to simmer and cook for 3 hours

  4. Liquid should reduce by half. You can take off heat and wait to serve.

  5. About 20 minutes before dinner cook pasta as recommended

  6. If soup has cooled down heat it up and add the pasta

  7. Dish out and top with 1 tablespoon parmesan per serving

  8. Serve with garlic bread
