Chicken Explosion

Serves: 4


Stuffed chicken is awesome. Stuff it, sear it and bake it with cheese is sinful.

I served this with my Cheesy Scalloped Potatoes and Side Salad which made it a full balanced meal.


Ingredients

2 tbsp olive oil

2 shallots thinly diced

½ cup shredded carrots

½ cup shredded zucchini

½ cup finely chopped broccoli

¼ cup vegetable broth

4 large chicken breast

Garlic salt or salt and pepper to taste

1 cup breadcrumbs

½ cup grated parmesan cheese

¼ cup finely chopped parsley

½ tsp dried rosemary

½ tsp dried thyme

3 eggs

¼ cup flour

¼ cup mayonnaise

1 cup bocconcini pearls

3 tbsp margarine + 1 tsp

1 cup shredded mozzarella cheese


Directions

  1. Preheat oven 350°F

  2. Heat oil on high in medium skillet and sauté shallots, carrots, zucchini and broccoli for three minutes while continuing to stir with wooden spoon

  3. Pour in vegetable broth and lower heat to simmer and cook until all liquid is absorbed

  4. Put veggies in a bowl and let cool down. I put in fridge to cool faster

  5. Pat dry chicken with paper towel and cut off any fat or silverskin

  6. Slice chicken in half to butterfly it and season with garlic salt or salt and pepper to taste

  7. Combine breadcrumbs, parmesan, parsley, rosemary, and thyme together in a flat dish

  8. Beat together eggs, flour, and mayonnaise in a bowl then pour into flat dish

  9. Add bocconcini to cooled down veggies and mix well

  10. Using 1 tsp of margarine and paper towel spread margarine in coverable casserole dish

  11. Place ¼ of the veggie bocconcini mixture on to one side of each chicken breast

  12. Fold over the other side of chicken on to the veggie mixture and dip both sides of breast first into the egg mixture then into the breadcrumb mixture

  13. Using your hand press firmly into the breadcrumb mixture so chicken is well coated and all four pieces are coated

  14. Using a medium skillet melt 3 tbsp margarine on high and add 2 chicken breasts

  15. Cook on each side for four minutes using a large spatula to flip chicken over carefully

  16. When both sides are cooked place in casserole dish

  17. Cook the remaining two breasts and place is casserole dish

  18. Cover with lid and bake for 30 minutes

  19. Remove lid and sprinkle with mozzarella cheese

  20. Bake uncovered for five minutes until mozzarella is melted all over chicken

Let sit for five minutes before serving
