For vegetarian version omit the chicken.
Ingredients
3 cups of dry penne pasta
2 tbsp oil
2 cups chopped cauliflower
1 onion, thickly julienned
2 bell peppers, thickly julienned
1 cup cooked chicken
1 cup white wine
2 tbsp hot sauce (optional)
Salt and pepper to taste
¼ cup parmesan grated cheese
Parsley for garnish
Directions
Cook pasta per instructions
Heat oil in large skillet
Sauté peppers and onions for 5 minutes
Add cauliflower and sauté for 3 minutes
Add chicken, wine, hot sauce and simmer for ten minutes
Scoop out pasta directly into sauce, add a little of the pasta water if require
Add salt and pepper to taste
Plate and top with parmesan cheese and parsley
