Mixing up the veggies always make the meal unique. The beans and artichoke are baked so that they get a little crunchy and the char gives a really deep flavour when you sprinkle with lemon they become very flavourful.
Ingredients
300 gr French green beans cleaned and cut in half
1 14-oz can artichoke hearts, halved and pat dried
¼ cup olive oil
1 tbsp dried thyme
1 tbsp garlic salt
¼ cup grated parmesan cheese
1 lemon
Directions
Preheat oven 425°F and line large baking sheet with aluminum foil
In a large bowl add green beans, artichoke, ¼ olive oil, thyme, garlic salt and parmesan cheese
Toss well and spread out on large baking sheet making sure artichoke are cut side down
Place in oven to bake until bottom of veggies are char brown, once cooked remove from oven and place veggies in a bowl
Cut lemon in half and squeeze over veggies
Toss veggies and serve as a side with any meal
