Makes 40 – 50 cookies depending on size
These cookies can be made all year round using different cookie cutters for the season, but when making them at Christmas they add colour to any cookie platter.
Ingredients
1 cup butter at room temperature
1 ½ cup sugar
2 eggs
2 tsp caramel extract
3 ½ cup flour
1 tsp baking powder
½ tsp salt
Glaze Ingredients
1 cup icing sugar
1 tsp vanilla
1 – 2 tbsp milk
Food colouring
Directions
Preheat oven 350°F
Using a stand mixer cream butter and sugar
Beat in eggs and caramel extract
Combine dry ingredients and gradually stir into mixing bowl until well blended
Cover dough and chill for 20 minutes
On a lightly floured surface, take ¼ of dough and roll out to 1/8 inch thick
Use cookie cutters to cut out shapes you want
Place 1 inch apart on ungreased baking sheet
Keep putting dough together and rolling out to make as many cookies as you can
Bake 8 – 10 minutes or until lightly browned
Cool on wire racks
Once fully cooled make white glaze and using piping tool use white to outline each cookie. This will all you to fill in the coloured glaze without it running down the sides
Make each colour glaze and ice cookies in the colour you want
Place cookies on baking sheet and freeze for two hours before placing in seal tight container
Use wax paper in between each cookie layer and freeze until ready to eat
