This green salad is simple to make, but it’s full of textures and flavours. The lemon gives it such a fresh taste that it’s the perfect side dish that can be served with anything.
Ingredients
2 small heads of butter lettuce, washed and dried
1 thinly sliced baby cucumber
Lemon vinaigrette to taste (recipe below)
¼ cup chopped pecans
2 tbsp parmesan cheese shavings or shreds
Directions
Hand chop lettuce into large bowl
Add cucumber and top salad with pecans and parmesan cheese
Pour in ¼ of lemon vinaigrette, add more to taste
Lemon Vinaigrette
¼ cup fresh lemon juice
Zest of one lemon
1 tsp finely chopped garlic
1 tsp Dijon mustard
¼ tsp salt, to taste
Ground pepper to taste
½ tsp honey or maple syrup
1/3 cup olive oil
½ tsp dried thyme
Directions
Add all ingredients in a jar with tight-fitting lid and shake to combine
If dressing is too tangy, add more oil
Store in fridge up to 1 week, oil will solidify a bit in fridge therefore let sit at room temperature for ½ hour before shaking and using
