Bruschetta bites are a traditional Italian appetizer that is great as a pre-meal or can augment a charcuterie board.
Ingredients
4 roma tomatoes, diced
1 tbsp dried oregano
¼ cup chopped fresh basil
1 tbsp minced garlic
½ cup finely chopped red onion
1 tbsp balsamic vinegar
½ tbsp olive oil
¼ tsp kosher salt
1 multigrain baguette
2 tbsp melted butter
1 tbsp Lawry’s garlic salt
½ cup shredded romano cheese
½ cup shredded mozzarella cheese
Directions
Add tomatoes, oregano, basil, garlic, onion, vinegar, oil and salt in a bowl and mix until well combined. Taste for salt, add more if required.
Place in fridge for two hours so tomatoes absorb all the flavours
In the meantime preheat oven 450˚F
Slice baguette into half inch thick slices on the diagonal
Whisk together melted butter and garlic salt
Using a pastry brush, brush butter on one side of bread and lay butter side down on baking sheet
Bake for 5 to 6 minutes until lightly golden around edges, turn them and bake second side
With butter side up let them cool while waiting for tomatoes
Preheat oven for maximum broil
Combine romano and mozzarella cheese
Place a tablespoon of tomato mixture on each slice of bread
Sprinkle cheese on each and broil until cheese has melted
Serve immediately
