Serves 4: about 300 calories per serving
Ingredients
4 slices bacon
1 medium onion, finely chopped
¼ cup flour
2 cups vegetable broth
1 cup water
1 large russet potato, peeled and diced
4 cups broccoli florets cut into bite size pieces
4 cups cauliflower cut into bite size pieces
1 can corn kernels
1 cup 1 % milk
Salt and pepper to taste
Directions
In a heavy pot cook bacon on med-high until crisp
Using slotted spoon transfer bacon to paper-lined plate
Add onion and cook until onion is soft
Add flour and stir until combined
Pour in broth, water and potato
Bring to a boil and then reduce heat to a simmer
Cook until potato is soft
Add broccoli, cauliflower, corn and milk
Cook until broccoli and cauliflower are tender, about 10 minutes
Add salt and pepper to taste
Serve in a bowl and top with bacon
Enjoy with a piece of toast or a multigrain bun
