Makes 16 croissants
When you have someone sleep over unexpectedly and want to make something easy for breakfast, have Pillsbury croissants, eggs, ham and cheese in the fridge and you can easily make this breakfast cheat. I call it a cheat because I use premade dough which is so versatile.
Ingredients
1 tbsp olive oil
1 bell pepper, finely chopped
1 tsp Lawry’s garlic salt or salt and pepper to taste
½ cup sliced ham cut into pieces
6 eggs
½ cup shredded mozzarella and cheddar cheese mix
2 pack Pillsbury small croissants
Red pepper jelly (optional)
Directions
In a skillet heat oil and sauté pepper and garlic salt for five minutes
Add in ham and sauté until ham turns a little golden
Beat eggs in a bowl and stir in cheese
Add eggs and cheese to pan and scramble the eggs, ham and cheese until cooked
Let mixture cool
Preheat oven to 375°F
Line a large baking sheet with parchment paper
Roll out croissants and cut into individual triangles
Add a tablespoon of mixture onto the base of the triangle and tightly roll up to the top
Spread some red pepper jelly on some or all of the croissants to give it a little zing
Bake for 15 minutes or until golden
Serve immediately
