Makes 21 muffins
This recipe is like my banana bread recipe except Hannah who loves to use my recipe said she only gave it a 9/10 because there were no chocolate chips. Therefore this one is for Hannah! I cut the nuts to ½ a cup and then top up with ½ cup chocolate chips. Got to say, she was right. These are delicious and your kids of all ages will love them.
Ingredients
3 ripe bananas
½ cup honey yogurt
½ cup softened butter
1 cup sugar
2 eggs
1 tbsp vanilla
1 cup crushed pineapple – squeeze juice out
1 ½ cup flour
1 tsp baking soda
½ tsp salt
½ cup chopped mixed walnuts and pecans
½ cup chocolate chips
Cooking spray
¼ cup golden brown sugar
Directions
Preheat oven 350°F
In a bowl mash bananas and stir in yogurt
Using a large bowl and mixer cream butter and sugar until fluffy
Add eggs and vanilla and mix well
Using a spatula fold in the banana mixture and pineapple until blended
Sift flour, baking soda and salt into the bowl and lightly fold into batter
Stir in walnuts, pecans and chocolate chips – batter will be chunky
Spray 18 muffin cups in two muffin trays, more if you have more dough
Pour 1/3 cup batter into each muffin cup and add water to any empty cups
Sprinkle golden sugar on top of each muffin
Bake for 30 minutes, until golden brown, and toothpick inserted in center comes out clean
Cool in pan for five minutes then run knife around pan and let cool on wire rack
