Balsamic Broccolini Salad

Serves: 4


I eat broccoli because I know it is good for me, I eat broccolini because they taste better than broccoli. I either fry them up with oil and garlic as a warm dish or make them into a salad with this balsamic dressing.


Ingredients – Balsamic Dressing

¼ cup balsamic vinegar

¼ cup vegetable oil

2 tbsp honey

1 heaping tsp wholegrain Dijon mustard

3 cloves garlic finely minced

2 tbsp finely chopped parsley

Salt to taste


Ingredients - Broccolini

1 pound broccolini (broccoli tender stems)

1 tbsp kosher salt

Pot of boiling water


Directions

  1. Combine all ingredients in a glass jar

  2. Shake until well combined

  3. Taste for right salt seasoning and add if required

  4. Can be stored in refrigerator for two weeks – shake well when using

  5. Add salt to pot of boiling water

  6. Clean and wash broccolini

  7. Add to boiling water and cook until tenderness you want

  8. Strain in colander and let cool

  9. When ready place broccolini in large bowl and pour as much dressing you want

  10. Toss until broccolini are well coated

Plate on nice platter or serve as a side dish to any meal
