These meatballs served with my homemade ranch dip are a great combination and zing. They make a great appetizer!
Ingredients
1 tbsp olive oil
½ cup finely chopped red onion
1 jalapeno pepper finely chopped
400 grams ground pork
1 tbsp lemon and herbs spice
½ tsp dried spearmint
½ tbsp crushed red pepper flakes
12 cubes mozzarella cheese – ½ inch in size
Directions
Heat oil, onion and jalapeno in sauté pan and cook until onion is softened
Set aside and let cool
Preheat oven to 400 °F and line a large baking sheet with parchment paper
In a large bowl add ground pork, herbs, spearmint, pepper flakes, and onion pepper mix
Combine all the ingredients until well blended
Flatten mixture in the palm of your hand and add a piece of mozzarella cheese
Wrap the mozzarella with meat mixture and form a ball
Place on baking sheet
Bake for 15 minutes, turning over once
Serve with my zesty ranch dressing
