Holiday Monday Apple Bites

These are a hit with kids of all ages and what is great is you can have a fried or baked version. Make the apple mixture an hour before you are ready to put the dough together as it will bring out the juice we need for the dough.


Ingredients

2 apples

Zest of one lemon

Juice of a lemon

1/3 cup - divided

1 tsp cinnamon

2 eggs

¼ cup vegetable oil

1 tbsp rum

2 tsp baking powder

1 cup flour

Oil for frying

White sugar for rolling

Icing sugar for sprinkling on baked version


Directions

  1. Peel apples and cut into small pieces in to a bowl

  2. Add lemon zest and juice, 2 tsp of sugar, cinnamon and mix well.

  3. Let sit for 1 hour

  4. For baked version preheat oven to 375˚F and line baking sheet with parchment

  5. Mix together eggs and rest of sugar in a bowl with hand mixer until light color

  6. Pour in 20 gram oil and rum, mix well

  7. Add the liquid from the apple mixture and mix well

  8. Sift flour and baking powder directly into the bowl and mix well with wooden spoon

  9. Add apples and mix well

  10. For fried version, heat oil in medium saucepan

  11. Using two teaspoons drop one teaspoon into pan and fry until golden all over

  12. Place on paper towel to drain oil

  13. While still warm roll them in white sugar

  14. For baked version

  15. Using two teaspoons place a teaspoon of dough onto baking sheet

  16. Bake for 10 to 15 minutes until golden brown around the edges

  17. Let cool and sprinkle with icing sugar
